Chili Rice

A simple one-pot beef, tomato, and rice dinner simmered with celery, onion, green pepper, and chili powder.

Ingredients

  • 1 lb ground beef
  • 0.5 cup celery (chopped)
  • 0.25 cup onion (chopped)
  • 0.25 cup green pepper (chopped)
  • 1 clove garlic (minced)
  • 2 tsp salt
  • 3 cups water
  • 16 oz diced tomatoes
  • 1 cup long-grain rice (uncooked)
  • 6 oz tomato paste
  • 1 tsp sugar
  • 1 tsp chili powder
  • 1 bay leaf

Steps

  1. Brown ground beef in a large saucepan over medium heat. Drain off any excess fat.

  2. Add celery, onion, green pepper, garlic, and salt. Cook until the vegetables are crisp-tender.

  3. Stir in water, diced tomatoes, long-grain rice, tomato paste, sugar, chili powder, and bay leaf.

  4. Cover and simmer for 25 minutes, stirring occasionally, until the rice is cooked.

  5. Remove the bay leaf before serving.
