Easy Chicken Curry

A comforting one-pan chicken curry with tender chicken simmered in a spiced tomato and coconut sauce, finished with baby spinach.
Ingredients
- 2 tbsp vegetable oil
- 3 chicken breasts (approx 500g, chopped into bite-size chunks)
- 1 large onion (peeled and finely chopped)
- 2 cloves garlic (minced)
- 2 tsp minced ginger
- 2 tbsp mild curry powder
- 1 tbsp ground coriander
- 1/2 tbsp ground cumin
- 1 tsp paprika
- 1/2 tsp ground cinnamon
- 1/2 tsp salt
- 1/2 tsp black pepper
- 2 tbsp tomato paste
- 400 g finely chopped tomatoes (1 tin)
- 240 ml chicken stock
- 400 ml full fat coconut milk (1 tin)
- 1 tbsp cornflour (mixed with 2 tbsp cold water to make a slurry)
- 60 g baby spinach (2 packed cups)

Steps
Heat vegetable oil in a large pan over medium-high heat. Add chicken breasts and cook for 5-6 minutes until browned all over. Remove the chicken to a plate and set aside.
Lower the heat to medium and add onion. Cook for 5 minutes until softened, then stir in garlic and minced ginger and cook for 1 minute until fragrant.
Stir in mild curry powder, ground coriander, ground cumin, paprika, ground cinnamon, salt, and black pepper. Cook for 1 minute to toast the spices.
Add tomato paste and stir to combine, then pour in finely chopped tomatoes, chicken stock, and full fat coconut milk. Stir well.
Return the chicken to the pan, bring to a simmer, and cook for 15 minutes, stirring occasionally, until the chicken is cooked through and the sauce has thickened.
For a thicker sauce, stir in cornflour and simmer for another 2 minutes.
Stir in baby spinach and cook until just wilted, 1-2 minutes.
Serve over boiled rice and garnish with fresh coriander and chilli flakes.
