One Pot Chicken Cilantro Lime Rice

Crispy seared bone-in chicken thighs cooked over fragrant jasmine rice finished with fresh lime juice and cilantro, all in one pot.
Ingredients
- 4-6 chicken thighs (skin-on, bone-in)
- salt

- 2-3 tbsp vegetable oil
- 2 tbsp butter
- 4 cloves garlic (finely chopped)
- 2 c jasmine rice (rinsed)

- 3 c water
- 2 limes lime juice
- 1/3 c cilantro (finely chopped)

Steps
Pat chicken thighs dry and season generously with salt and pepper. Add vegetable oil to a cold Dutch oven and swirl to coat. Place chicken skin-side down, then turn heat to medium.
Cook undisturbed until the skin is golden and releases easily, 8-10 minutes. Flip and cook another 3-5 minutes. Move the chicken to a plate and let the pot cool off the heat for 2-3 minutes, discarding some excess oil if desired.
Return the pot to low heat, melt butter, and add garlic, cooking about 1 minute. Stir in jasmine rice to coat, then season with salt and pepper.
Pour in water and stir. Nestle the chicken back in skin-side up. Raise heat to medium and bring to a simmer. Once bubbling, cover, lower the heat, and cook 25 minutes. Remove from heat and rest 10 minutes with the lid on.
Take out the chicken, then stir lime juice and cilantro into the rice with a fork. Serve with the chicken.
