Pan-Fried King Oyster Mushrooms

A super-savory pan-fried mushroom side dish made with King Oyster mushrooms (also called King Trumpet mushrooms).

Ingredients

  • 8-12 ounces King Oyster mushrooms
  • 2 tablespoons olive oil
  • 0.25 teaspoon kosher salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons unsalted butter
  • 2 cloves garlic (thinly sliced)
  • 0.25 teaspoon ground nutmeg
  • 0.5 cup parsley leaves
  • 1 lemon (zested)

Steps

  1. Preheat a large cast-iron skillet over medium-high for 5 minutes.

  2. Slice King Oyster mushrooms in half lengthwise, leave smaller mushrooms whole.

  3. Reduce heat to medium and add olive oil; swirl to coat pan. Arrange mushrooms in an even layer, as best you can, cut side down. Cook, without moving, for 3 minutes.

  4. Season mushrooms with kosher salt and black pepper; toss and continue cooking until golden brown all over, about 5 minutes.

  5. Reduce heat to medium-low, add unsalted butter, garlic, and ground nutmeg and cook for 2-3 minutes until garlic is toasted.

  6. Remove skillet from heat and add parsley leaves and lemon.

  7. Stir to combine then season with additional kosher salt, black pepper, and lemon to taste.
