Tofu & Broccoli on Rice

Crispy pan-fried tofu and boiled broccoli tossed in a glossy Chinese-style brown sauce, served over fluffy rice.
Ingredients
- 2 c rice
- 2 c water (plus 2 tbsp)
- oil
- 1 block firm tofu
- salt
- pepper
- 2 cloves garlic
- 1 knob ginger
- 1 head broccoli
- 3 tbsp soy sauce
- 2 tbsp Chinese cooking wine
- 2 tbsp hoisin
- 1 tbsp honey
- 1 tbsp sesame oil
- 4 tbsp chicken stock
- 1 tbsp cornstarch
Cookware

Steps
Rinse rice to remove the excess starch, then add it to a pressure cooker along with the water. Pressure cook for 4 minutes.
Bring a pot of water to a simmer on the stove. Set a pan preheating on low heat and drizzle in some oil.
Slice the firm tofu into 1/2 inch pieces, pat dry, and season with salt and pepper. Add to the preheated pan.
While the tofu fries, chop the garlic and ginger, and cut the broccoli into florets. Flip the tofu to crisp up the second side.
In a bowl, whisk together the soy sauce, Chinese cooking wine, hoisin, honey, sesame oil, chicken stock, and cornstarch until there are no lumps.
Drop the broccoli into the simmering water and boil for 2 minutes. Remove the tofu from the pan, then add the garlic and ginger and fry for 1-2 minutes. Pour in the sauce and stir until it thickens and bubbles.
Cut up the tofu, then add it and the boiled broccoli into the pan. Stir to coat everything in the sauce and serve over the hot rice.
